Ingredients
6 or 7 ripe plum tomatoes (about 1 1/2 lbs)
2 cloves garlic, minced
1 Tbsp extra virgin olive oil
1 teaspoon balsamic vinegar
6-8 fresh basil leaves, chopped.
Salt and freshly ground black pepper to taste
1 baguette French bread or similar Italian bread
1/4 cup olive oil
Directions
Prepare the tomatoes first. Parboil the tomatoes for one minute in boiling water that has just been removed from the burner. Drain. Using a sharp small knife, remove the skins of the tomatoes. Based on a recipe from Sara Moulton/Gourmet Magazine, modified by Mike Disharoon
Ingredients:
2 teaspoons olive oil
1 medium-size yellow onion, chopped
2 cloves garlic, minced
1 medium-size all-purpose potato, peeled and cut into 1/2-inch cubes
1 medium-size sweet potato, peeled and cut into 1/2-inch cubes
1 medium-size yellow squash (about 1/2 pound), cut into 1/2-inch quarters
1 medium-size green squash/zuchini (about 1/2 pound), cut into 1/2-inch quarters
1 tablespoon dried basil, crumbled
1 teaspoon dried oregano, crumbled
2 large bay leaves
4 cups torn kale (stems removed)
1 large can (28 ounces) crushed low-sodium tomatoes, with their juice
1 can (14 ounces) diced tomatoes, with their juice

2 cans chickpeas - rinsed
1 14.5 oz can diced tomatoes
1 large onion chopped into long thin strips
3 medium potatoes, peeled and chopped into bite-sized chunks
1 Tablespoon finely diced ginger
1 Tablespoon finely diced garlic
1 Jalapeno, diced
2 teaspoons salt
2 teaspoons ground corianger
2 teaspoons garam masala
1 1/2 teaspoons turmeric
1 teaspoon cumin seeds
1 teaspoon onion seeds
